Sanjeev Kapoor’s jeera rice recipe features sautéed basmati rice cooked with aromatic whole spices in ghee.

How to make jeera rice

Step 1: Heat ghee in a deep non-stick pan. Add the star anise, cinnamon stick, black peppercorns, green cardamom, cloves and cumin seeds. Sauté until the spices become fragrant.

Step 2: Add the soaked and drained basmati rice and sauté well, ensuring the grains are coated with the spiced ghee. Add 3 cups of water and salt, and mix well.

Step 3: Cook the rice on low heat and let it come to a boil. Cover the pan and cook for 10-15 minutes, or until the rice is cooked.

Step 4: Once cooked, add the chopped fresh coriander and take the pan off the heat. Gently fluff the rice with a fork to separate the grains.

Step 5: Transfer the jeera rice to a serving plate and serve hot.

What to serve with jeera rice
